Vegan tofu scramble 🥑

Here is a quick, cheap and tasty vegan breakfast option- tofu scramble! With a twist - I add potato to bulk it up a bit and it also means you don’t need to pop any toast in, just eat it by itself or with your favourite sides (I often do 🥑 or 🍅).

Ingredients:

- 1 block of tofu (I go for the omega 3 / protein enriched ones if available)
- 3 potatoes, diced and boiled
- 2 cloves garlic, diced
- Oregano/basil/your fav herb flakes or fresh (chives also go real well but only when cheap lol) 🌱
- 1 tbsp vegan butter/oil
- About 1/8 cup plant milk
- Salt and pepper
- Note this recipe is a bulk one - to be made at the start of the week and stored in the fridge until finished

Method:

1. Press the moisture out of the tofu with a kitchen towel and pop the potatoes in a pot of boiling water.
2. Add the oil and garlic and herbs to a pan and crumble the dry-er tofu on top
3. Turn up the heat and the plant milk 🥛
4. Strain the potatoes and add to the pan. Stir and serve/pack away!

And to end with a little story, the avo in the pic was purchased by a street stall outside my work in midtown. I nipped out to run some errands and couldn’t resist grabbing just one avo. The man upselled me 2 for $3 without much resistance (hello) and added some free bananas before handing them to me. It was a nice little interaction and it turned out to be one of the best avos I’ve ever tasted! 👒
